Vegan Mayonaise or Sourcream Recipe

Recipe as follows

1 cup organic Eden Soy Milk unsweetend
1 tablespoon Potato Flour
1 tablespoon Lemon, Lime or Key Lime juice
1 teaspoon Salt
Optional - 1 teaspoon Onion powder or a few pinches of Garlic

Blend ingredients till smooth. This only takes a few seconds. Then add the extra light olive oil while blender is on high till the blender goes whiz and it won't mix anymore about 1/3 to 3/4 oil. (it has to be extra light)

This is one of our favorite recipes, use anywhere you would use mayonaise or sourcream!

Awesomely wonderful girls

Two of the sweetest girlfriends I could ever wish to have!
♥Allisha and Kelsey♥
Always thoughtful thinking of others, their needs and sometimes even little luxuries, like paper plates so that I didn’t have to do as many dishes!!! Caring for my heart, in happiness and hurt and letting me know they are there for me. Loyally standing by when all hell breaks loose!!! These are some super duper awesomely wonderful girls!

And I am so blessed having them in my life!!!

Sunset

This is the view we enjoyed from our "little yurt house" on the mountain a few nights ago! I don't think there is anything quite as nice as a sunset to end a long and busy day! It reminded me of the verse in Psalm 113
"From the rising of the sun unto the going down of the same the name of LORD'S [is] to be praised."
There are so many beaufitul everyday things to praise Him for!

Grandma Nana

Well, I finally got my Grandma to let me take a few pictures of her, so Mom this is for you since you are in Africa!!! It was not easy to convince her! I know how much you’d love to see her and through your arms around her and hug her. Hmm… What can I say about Grandma? Well…she is a chatter box, that is one thing for sure! The other day Grandma was talking so fast she could hardly catch her breath (seriously, you could her gasp when she inhaled!) and she was complaining about how her mouth was sooooooo dry, and she just couldn't figure out why! My aunt and I looked at eachother and started to chuckle! Then my aunt Heidi gently put her hand on Grandmas shoulder and kindly told her that she had to stop talking long enough for her mouth to get moistened back up! After that all three of us had a hearty laugh! She loves her family, prays often, says that’s just - f a b u l o u s - sometimes she flubs up and says oh golly! She used to play the piano, but now her hands are all crippled up, she still sings though! One song that reminds me of her is “Jesus is all the world to me” and another is “Take the world but give me Jesus” she loves music, she loves to research things of interest, make lists, organize and scheme. Lately she is getting more and more dependant, and less and less able to care for herself. Such a sad thing to watch someone you love so dearly grow old. I love you Grandma Nana.

Hot Cocoa and my Niece

We just enjoyed a lovely little vacation at Eagle Crest Resort in the Redmond, Bend Oregon area. We were invited by my brother Brett and his family! What fun it was to see them again! My sis in law Tenae is expecting again (due in August) and of course (other than her feeling a little yucky) is just as sweet and beautiful as ever! Valyncie my adorable niece had changed so much since when we last saw her a few months ago, she is totally getting all grown up! We haven’t been apart even one whole day and I miss her already! I love her hugs, (she gives the best little kid hugs ever!) her kisses, her smiles, her voice is so precious, especially when singing songs to her mommy, and when she is saying “I love you” – she is such a doll! I made her hot cocoa, and she liked it as far as I could tell (she seems to be a picky eater) anyways I loved it! I think it is by far the best Vegan chocolate milk I have ever had! Here is the recipe: "Brazil Nut Chocolate Milk"1 cup Brazil nuts (soaked) Blend till smooth with 4 cups water and then strain out pulp in a milk bag or cloth, pour strained milk back in to blender. Then add: 1/3 cup sweetener (My first batch I used Agave and my second organic cane sugar) Both were yummy! 3 TBS cocoa powder (Wondercocoa is the best) 1 TBS soy Lecithin (non GMO) And a pinch of salt (pink Himalayan salt is tasty) Blend all till smooth, heat or chill and enjoy! You will be surprised at how absolutely delicious it is…
